Marc “danger” Baltes grew up in St. Louis MO and has been working in restaurants since age 14. He bussed tables, then cooked at a small family restaurant, Chris’ Pancake and Dining, all thru high school and developed a passion for the bustle and excitement of restaurants. After spending a brief time in the French Foreign Legion, Marc graduated from the Culinary Institute of America in Hyde Park, then was so impressed with the food on a visit to San Francisco he moved there. He worked at Zuni Cafe, Quince and in 2005, he started as the sous chef at Pizzaiolo, just weeks after the restaurant opened. In 2008 he moved back to St. Louis to spend time with his family but California had become home. In 2011 Marc returned to Oakland and the Pizzaiolo/Boot and Shoe family and has been the chef since 2012. When he isn’t at the Boot and Shoe, he is walking his dog or cooking dinner for his wife and two sons.
